MEMORIAL DAY MEAL WITHOUT THE BARBEQUE!

BLACK ANGUS MEATLOAF AND RICE PILAF FOR MEMORIAL DAY MEAL!

 I wanted to go the RiverHead today to go to Splish Splash…..but guess what…..the  GAS PRICES ARE SKY HIGH! 

  After I filled my gas tank on Friday night ($52.70),  I drove my car  to pick up my son from his all day PEP RALLY at WORLD JOURNALISM HIGHSCHOOL  in Flushing Queens,  and day end “ceremony evening Luau Party.” 

 The next day… Saturday afternoon my son had tennis from 12:00 pm until 6:00 pm.  I attended a meeting regarding up coming activities for the Tennis Summer Camp, with the Youth and Tennis Junior Academy, the Project GiveBack,  the Fundraiser Dinner,   and Kids Day, etc., etc.. 

Once my son finished had tennis tournments, (oh, and there will be additional  USTA Tennis tournements for his class and category)….I took him home.  I have not been out of the house since.  The gas is too expensive!!! 

 I am a single parent so I cannot afford the price of entry for my son and myself to Splish  Splash.  I cannot afford the food prices at Splish Splash,  and the Gasoline to travel from Queens Village is way to high. 

 I hope in the next few weeks I can afford to go there.  I am a water person. 

 I am an Aquarious and I love the sun,  beach and pool….all the time….every time

  I grew up with a pool….so Splish Splash is my speed. 

I do not like Great Adventures or scary rides…just plain LAZY RIVER,  AND WAVE POOL!!! 

 But for today….I have to settle for my Black Angus Meat Loaf and Rice Pilaf!

My son is doing homework, and I am about to go to the upstairs bath room, and bedrooms, and hallways to clean. 

 HERE IS MY  little Memorial Day receipe for those who cannot afford the Amusement Park…or even to go to the Park for a barbeque!

RICE PILAF:

BRAND USED—  Near East 100% Natural Rice Pilaf mix Garlic and Herb flavor, with other natural flavors!

Range top directions: 

1- In medium saucepan, bring 1-3/4 cups water and 2 teaspoons olive oil or butter just to a boil.

2- Stir in rice and contents of Spice Sack. Return to a boil.

3- Cover: reduce heat to low.  Simmer 20 to 25 minutes or until most of water is absorbed.

4- Fluff pilaf lightly with fork before serving.  Makes 3 cups.

You can purchase this box of Near East at most WaldBaums, Pathmark, or Keyfood Supermarkets!

Now for the MeatLoaf:

I purchased my Black Angus Meat at BJ’s in Valley Stream.  It cost me $9.00.  It was worth it.  I kept it in the freezer.  I defrosted it in two days.  It was 3.15lb,  at 2.99 per lb..  The meat was 85% lean 15% fat.

My simple receipe:

I mixed the meat up with milk,  Adobo,  a little pepper, (((season to taste of course))) and flour.

It will be medium soft and will have a slight peppery fragrance.  Also mix in 1/2 a cup of  RAGU ROBUSTO! 7 HERB TOMATOE SAUCE!!!

MIX ALL OF THAT TOGETHER..

PUT IN PAN   of  your choice,  glass or aluminum AND

COOK ON 450 FOR  2 HOURS! 

 ALWAYS….ALWAYS, 

 ALWAYSSSSS. COOK MEAT UNTIL WELL DONE….

.NEVER, HAVE PINK MEAT….

NEVER HAVE PINK MEAT…

.COOK MEAT UNTIL DARK BROWN ON THE INSIDE…

TAKE A FORK AND CHECK YOUR MEAT….MAKE SURE IT IS WELL COOKED….

When you are sure  the meat is well done…then take your favorite

ketchup and lavish on the top of your “Poor Woman’s MeatLoaf” and replace back into oven until meat loaf and ketup become one…

.the Ketchup should have a glazed appearance and the meat should be dark and have a slight crusty appearance on the edges.

ALWAYS—ALWAYS—-ALWAYS—CHECK THAT YOUR MEAT IS WELL COOKED.—-COOK SAFE….COOK HEALTHY……!!!!!!
